Cassava fufu, known at home as akpu or santana, is fermented cassava worked into a soft, stretchy swallow. It has the light sour note that fufu lovers look for and a texture that pulls cleanly and goes down easily.
It is the traditional match for bitter-leaf, oha, ogbono, egusi and white soup, and it stands up to the thickest of them. Mild in itself, so the pepper comes from your soup rather than the fufu.
