Egusi Soup is a traditional Nigerian soup made with richly flavoured melon seeds, palm oil, iru, crayfish, stockfish and broth, cooked with capsicum chinense and red poblano and finished with a blend of sophisticated spices.
The ground melon seeds thicken the pot into soft, savoury curds that soak up everything around them, giving the soup its nutty body and deep golden colour. Pepper level is medium, warm and rounded rather than harsh.
