An extra portion of Tuwon Shinkafa, the rice swallow of northern Nigeria. Rice is cooked right down and worked into a smooth, slightly sticky mound that is softer and lighter than cassava or yam swallows.
It is mild in itself, so the heat comes entirely from whatever soup you pair it with. Miyan kuka and miyan taushe are the traditional partners, though it takes egusi, okro and a plain pepper stew just as well.
