Peanuts
Groundnuts, or peanuts as most menus call them, are the snack West Africa runs on. Firm, oily and gently sweet, with a roasted depth that makes one handful turn quietly into three.
At home they are eaten on their own, alongside roasted corn, or with a soft banana for that classic sweet and savoury pairing. They also work as a calm companion to a spicy plate, settling things between forkfuls, and there is no heat in them whatsoever.
