Tigernut, known at home as aya or ofio, is milled and cooked into a swallow that is smooth, faintly sweet and distinctly nutty. It moulds cleanly, swallows easily, and gives you something different from the cassava and semolina route without giving up on texture.
Mild on its own, so the soup decides the heat. It works with egusi, ogbono, okro, oha, afang and bitter-leaf, and it is a good starting point if you have never tried a tigernut swallow before.
