Tuwon shinkafa is the rice swallow of northern Nigeria. Soft rice is cooked down and pounded until it turns smooth and slightly sticky, then shaped into a round that holds together neatly on the plate.
The taste is gentle and clean, closer to plain rice than to yam or cassava, and there is no pepper in the swallow itself. It is traditionally eaten with the northern soups, miyan kuka, miyan taushe and miyan kubewa, and it works just as well with egusi or okro if that is what you are having.
