What garri is, quickly

Garri is grated cassava that has been fermented, pressed, sieved and toasted until dry. That toasting is what gives it the slight sourness and the long shelf life. In a Kigali kitchen it earns its keep twice over. Stir it into hot water and you have eba, the firm swallow that goes with egusi, ogbono or okro. Soak it in cold water with sugar, groundnuts or milk and it becomes the drink every Nigerian student knows.

How to make eba with it

Boil water and pour it into a bowl. Add the garri steadily, a little at a time, and let it sit for a few seconds to drink the water. Then turn it with a wooden spatula until it is smooth and firm, with no dry pockets left. Shape a portion, and serve it hot with egusi, ogbono or okro soup. If it feels too stiff, a splash more hot water fixes it.
