Achicha and Fio-Fio is one of the great Igbo comfort dishes. Achicha is cocoyam that has been sliced, dried and stored, then rehydrated and cooked; Fio-Fio is pigeon peas, simmered until soft. The two come together in red palm oil with peppers, onions and traditional seasoning for a thick, earthy, deeply savoury plate.
