Gbegiri is the Yoruba bean soup, made by cooking beans until they collapse and then working them smooth. What comes out is velvety and golden, mild and gently savoury, with palm oil giving it colour and depth.
It is traditionally eaten as part of abula, alongside ewedu and stew with amala, but it is very good on its own with any swallow. Served here with the assorted meat selection for a mix of cuts in the bowl. Prices are in RWF.
