Vegetable soup is greens done the West African way: plenty of leaf, wilted just enough, held together with palm oil, crayfish, pepper and stock instead of being thinned out with water. It tastes fresh and savoury at the same time.
Made here with assorted meat, the mix of cuts such as shaki and ponmo, so there is something substantial in every spoon. The pepper stays moderate and the greens keep their colour. Serve it with eba, semo, fufu or pounded yam, or beside white rice for a lighter plate. Prices are in RWF.
