Ofe nsala is the soup that leaves out palm oil entirely, which is why it is called white soup. Yam is used to thicken it, and the flavour comes from pepper soup spices, utazi and uziza rather than from oil.
The result is light in colour but far from light in taste: peppery, aromatic and slightly bitter at the edges from the utazi. Served here with the assorted meat selection, it is a soup for eating with pounded yam or a swallow of your choice. Prices are in RWF.
