Elubo Flour, sold here as Elubo Flour / Amala Flour, is the milled flour Nigerians use to make amala, the smooth dark swallow that belongs with ewedu, gbegiri and stew.
Making it is quick. Stir the flour into hot water and turn it steadily until it comes together into a soft, stretchy mound with no lumps. It sets in minutes and has a mild, earthy taste that lets the soup lead.
Serve it hot with ewedu and gbegiri for the full abula plate, or with egusi, ogbono or okra soup.
