Groundnut Soup is the West African peanut soup: roasted groundnuts ground to a paste and simmered with tomatoes, onions, peppers and rich broth until the pot turns thick, creamy and glossy. The flavour is nutty and rounded, with a gentle sweetness sitting under the savoury base.
Spice level is mild to medium, so it suits guests who are new to Nigerian food as well as regulars. Enjoy it with rice, or with pounded yam, eba or semo. Please note it is made with groundnuts and is not suitable for anyone with a peanut allergy.
