A one pot dish and proper comfort food. Unripe plantain cooks down in palm oil with pepper, onion, crayfish and seasoning until the pieces go tender and the sauce thickens around them, with bits of fish through the pot for depth.
It is savoury, slightly starchy and gently peppery, filling enough on its own that it needs no rice or swallow beside it.
