Shrimps sauce is the everyday cousin of our prawns sauce, and just as good over a plate of rice. The base is the familiar Nigerian one, tomatoes, red peppers and onion cooked down slowly in oil until the colour deepens and the raw edge disappears.
Shrimp goes in late so it keeps its sweetness and bite. The sauce is savoury with a clear pepper warmth. Serve it with white rice, boiled yam, plantain or bread, or use it to lift a simple plate into a proper meal. Prices are in RWF.
