Sweet potato and plantain softened together in one pot, in a palm oil base seasoned with onion, pepper, crayfish and stock until the sauce turns thick and golden around them.
The two play off each other nicely. Sweet potato turns mellow and sweet, plantain keeps a firmer bite, and the savoury oil with its mild pepper holds the whole thing together. It is filling on its own and needs nothing served alongside.
