Ukpaka, also called ugba, is African oil bean seed that has been boiled, sliced into fine ribbons and left to ferment. That fermentation is everything: it gives ukpaka its pungent aroma and its deep, funky, savoury flavour, the sort that announces an Igbo kitchen before you reach the door.
