Vegetable Soup

Nigerian vegetable soup is greens cooked properly rather than boiled to death, a close cousin of efo riro. Ugu, spinach or waterleaf go into a base of palm oil, blended pepper, onions and crayfish, with assorted meat or fish worked through.

The result is dense, savoury and lightly peppery, with the greens still holding some bite. Eat it with pounded yam, eba or fufu.
