Nigerian vegetable soup, efo riro in style, cooked without meat, fish or crayfish. Dark leafy greens are simmered down in palm oil with blended pepper, onion and seasoning until the oil turns red and the greens hold together in a thick, spoonable soup.
It is savoury and properly peppery, and it eats best with a swallow: poundo yam, plantain fufu, semovita or cassava fufu, each ordered separately.
