Bitter-leaf soup, ofe onugbu to the Igbo, is one of the great eastern Nigerian soups. The bitter leaf is washed and washed until only a gentle, pleasant edge remains, then simmered into a thick palm oil base with traditional seasoning. The result is dark, rich and savoury, with just enough bitterness to keep it interesting.
It comes with cassava fufu, the soft, smooth swallow made from fermented cassava. Tear a piece, dip, swallow, repeat. Heat is moderate rather than fierce, so the soup itself stays in the foreground. This is the buffet serving.
