Nigerian tomato stew is the base of half the food we cook. Tomatoes, red peppers and onions are blended and fried down slowly in oil until the raw edge cooks off and the sauce turns deep red and glossy.
It is savoury and mildly peppery, and it goes with almost everything: white rice, boiled yam, plantain, beans, potatoes or swallow.
