Egusi is ground melon seed cooked into palm oil until it thickens and sets into soft savoury lumps, then finished with greens, crayfish, pepper and your assorted meat or fish. The taste is nutty, deep and unmistakably Nigerian.
It is a moderate heat soup, more warmth than fire, and it belongs with swallow. Pounded yam, eba and fufu all work, and the leftovers taste even better the next day.
