Moi-moi is steamed bean pudding, and it is one of the great Nigerian dishes. Peeled beans are blended smooth with onion, red pepper and oil, seasoned, then steamed until the mixture sets into a soft, savoury cake with a gentle wobble.
The flavour is deep rather than hot, with only mild pepper behind it. It is eaten with jollof rice at parties, with pap in the morning, with garri in the afternoon, or simply on its own.
