Ofe Nsala, better known as White Soup, is the Igbo soup that skips palm oil entirely. It is built on a clear, peppery broth thickened with pounded cocoyam until it turns glossy and just thick enough to coat a spoon, then finished with utazi leaves, ground crayfish and the warm aroma of ehuru (calabash nutmeg).
The taste is clean, herby and properly peppery, with the light bitter edge from utazi that Nigerian diners look for. Heat sits in the medium range and it is excellent with pounded yam, semo or fufu.
