Cassava Fufu, known at home as akpu or santana, is fermented cassava pounded into a soft, stretchy swallow. It has the light sour note that fufu lovers look for, and a texture that pulls cleanly and swallows easily.
It is the traditional match for bitterleaf, oha, ogbono, egusi and white soup, and it holds up to the thickest of them. Mild by itself, so the pepper level is set by your soup, not by the fufu.
