Tuwon Shinkafa is the northern Nigerian rice swallow: soft rice cooked down and mashed until it is smooth, then moulded into a warm round. Mild, comforting and a little lighter than flour-based swallows.
In Hausa homes it is eaten with miyan kuka, miyan taushe or a hot pepper soup, and it works just as well with egusi, okro or ogbono. It carries no pepper of its own, so you decide how hot the plate gets.
