Groundnut soup is built on roasted peanuts ground to a paste and cooked into a stew base with tomatoes, onions, pepper and meat or fish. It comes out thick, nutty and faintly sweet, with a comforting richness that coats the spoon.
Heat is moderate and warming, always balanced by the peanut. Serve it with rice, with swallow, or on its own as a hearty bowl.
