Shanghai fried rice is our lighter, Asian leaning take on fried rice. Long grain rice is stir fried at high heat with mixed vegetables and seasoning until the grains separate and pick up the faint smokiness only a very hot pan gives.
It is savoury and mild, which makes it good middle ground on a table where some people want pepper and others do not, and a natural partner for wings, grilled chicken or a spoon of stew.
