Amala is the Yoruba classic: finely milled yam flour, known as elubo, stirred into a smooth, stretchy, dark brown swallow that moulds neatly and pulls clean.
It is mild and gently earthy on its own, which is exactly why it works so well with a strong soup. The traditional pairing is ewedu and gbegiri with stew, but it holds its own against egusi, ogbono, okro and bitter-leaf just as happily.
