Egusi soup made without meat, fish or crayfish. Ground melon seeds are cooked in palm oil with blended pepper and onion until they set into the soft lumps that make egusi what it is, then leafy greens go in at the end.
It is nutty, thick and rich, with a steady pepper heat that builds rather than shouts. Serve it with any swallow: poundo yam, cassava fufu, semovita or plantain fufu, ordered separately.
