Gbegiri is the smooth one. Peeled beans are cooked until they surrender completely and are worked into a velvety, pale gold soup, seasoned with palm oil, crayfish and pepper. There is nothing to chew in the base itself, which is exactly why people love it.
Seafood gives this bowl its protein and a clean savoury lift. The heat is mild to medium. Traditionally it is served alongside ewedu and amala as abula, but it holds its own with any swallow you like. Prices are in RWF.
