Beef suya is Nigeria's most famous street food. Thin strips of beef are threaded onto skewers, coated in yaji, the groundnut and chilli spice blend from the north, then grilled over open coals until the edges char and the fat crisps.
Expect a nutty, smoky flavour with a solid kick of pepper behind it. This portion runs 200g to 250g of beef, which is a serious snack for one person or something for two to share over drinks.
