Tuwon Shinkafa is northern Nigeria's rice swallow: soft rice cooked right down and worked into a smooth, slightly sticky mound. It is gentler and more delicate than cassava or yam swallows, and it soaks up soup rather than fighting it.
The traditional partners are miyan kuka and miyan taushe, though it is very good with egusi, okro or a plain pepper stew as well. Mild on its own, so your soup sets the heat.
