Wheat fufu is milled wheat cooked into a firm, tan-coloured swallow with a nutty, wholesome flavour and a satisfying chew. It is denser than semolina and holds its shape well, so it stays neat right through the meal.
It is a favourite with heavier soups, egusi, ogbono, okro, oha and bitter-leaf, where a sturdy swallow is welcome. Mild on its own, so the soup sets the pepper level.
