Unripe plantain, milled and cooked down into a soft, springy swallow. Plantain fufu carries a mild, faintly sweet plantain note and feels lighter than yam or cassava swallows, which is exactly why regulars keep going back to it.
Serve it with egusi, ogbono, okro, oha or bitter-leaf and let the soup bring the pepper. It moulds well, holds together at the table and swallows easily.
