Tigernut drink, kunun aya in northern Nigeria, is made by soaking and blending tigernuts until they give up a thick, milky liquid. It comes out naturally sweet, gently nutty and creamy without any dairy in it, which is why it has quietly become one of West Africa's favourite refreshments.
